DOWN, DOWN BABY

Down another 1.6 #, since I last logged in here. Under 230. Just barely, but still there! :) Yaay me. However, it’s actually a gain of .2 from my last weigh in, which apparently I neglected to blog about. I am a terrible blogger.
Last weekend was rough, feeling the Autumn in the air while taking Boy Wonder to Baseball Camp I gave in and got a Starbucks Pumpkin Spice…VENTI of course. 65 carbs in that one drink! Oof. I swear if it didn’t cost so much I would have tossed it out. In my defense, I did try to pawn it off on Rambo, but he didn’t like it. From there we had brunch on Sunday at Garage Bar. It was delicious, but I really should not have eaten the grits. Thankfully I got my act together and ate like I knew I should have been doing. WHEW!
My mind does funny things when I move from Phase 1 to Phase 2 on Atkins. It’s like my mind is all…”woo-hoooo! NO RULES! I can have more carbs!” When in actuality, my body is all…”hey dumbass you are still super sensitive to carbs, reel in it big girl!” Oh well, live and learn. I do believe that this week will show a respectable loss.
With autumn, my favorite season and time of year there are many goodies that I am forced to forego. Such as Halloween candy and apple baked goods. I may be able to find some low carb substitutes that will tide me over. I do know that I have a killer low carb no crust cheesecake recipe! I might be able to tweak it with some pumpkin puree and spices. YUM!
I currently have this recipe (plain) in the oven. I can hardly wait for it to cool.
Here is the recipe:
LOW CARB CHEESECAKE
Ingredients:
3- 8 ounce packages of Philly Cream Cheese
13 Stevia in the Raw packets
2 Tsp Vanilla Extract
3 whole eggs
1 cup sour cream
How to Prepare:
Preheat Oven to 375 Degrees F
1. Soften cream cheese in a large bowl.
2. Blend cream cheese ALONE until creamy and of an even consistency.
3. Add sugar, vanilla and sour cream and blend until incorporated.
4. *Important* Add eggs ONE at a time and blend after each until incorporated into batter.
5. Smear 9-10 inch glass pie pan with butter to prevent sticking.
6. Add Batter to pie pan.
7. Place pan in oven for 45 minutes or until somewhat firm in the center.

ONE WEEK BACK ON ATKINS
One week and 7 pounds are gone…*POOF*
That’s some serious motivation to keep going strong and not cheat. Some non Atkins people may say, “Well that’s just water weight”
Whatever, weight is weight when it comes to the scale and how you look and feel in your own skin. Also, I was previously on a diet, calorie counting and drinking plenty of liquids. So my loss is not as much as it would have been if I hadn’t been doing a thing beforehand.

BACK IN THE SADDLE AND MULLIGANS
Back in the saddle, and probably facing the wrong way, knowing me! It’s almost 2 months since I last posted anything. So much STRESS!
Teen Queen got all moved into the dorm; she’s been liking college life so far. Of course whenever I hear from her it’s that she needs money. After paying almost $1,000 for books…I am done! She likes to go out to eat. Too bad kid, use your meal plan that we have paid for! Oh well, I’m sure a lot of people go through this. This is my first time ever. I didn't go to college and Rambo went to Military Academy, so this whole thing is new to us. Also, the kid needs to learn to adjust to being a poor college student. ;) We are damn sure not going to sit here at home doing nothing while munching on Ramen every night.
Boy Wonder is in the swing of things in his Sophomore year of High School. He is liking it a lot. He is off season training with his team, which he is digging. Running and hitting the gym. Even though we have a treadmill and some free weights here at home. He is enjoying structure and the time with his teammates. He is learning a lot about his body and what it’s capable of. One thing in his favor, Rambo and I made phenomenal kids. :) They are both quite studly athletes! He is also learning that despite my current appearance, Momma is quite knowledgeable when it comes to health and fitness.
To add to my stress of finances, kids going away to college, kids growing up in general etc…Rambo has been off training. I’m hoping that there isn't a deployment in our future, but if it happens…we will be ready, after all this isn't our first rodeo!!!
Needless to say, with all of this life happening around me it’s taken it’s toll. Stress and anxiety makes me want to sleep. Not only to hide away from the reality of it all, but also the damn fatigue. So much fatigue, so much sleeping, so many headaches, so much anxiety about every little thing. SO MUCH THAT’S NOT GOOD FOR ME!
Friday, after realizing that I gained whatever I had lost and that my jeans were too tight to wear comfortably all day; I decided it was time to switch it up. After 2 months of tracking every food and meal rarely going over 1200 calories a day, I had nothing to show for it. Nothing. It was frustrating. It was one less thing I needed in my life right now. Angry and upset I decided to go back to what I know best.
SWITCH back to ATKINS!
How I love Atkins. It just makes me feel better. I have more energy, less fatigue, less headaches, less feeling bad all the damn time.
After 2 whole days following Atkins, my body wakes up after 7 hours sleep. Feeling rested and refreshed, not like I had been hit by a truck and turning over for more useless sleep. I go the entire day without feeling the need for a nap. *what?* I am too young to feel that tired and old all the time. At 42, I refuse to live out the second half of my life being this size.
It’s time for a re do. I will take my Mulligan please!
